Ingredients

500g seedless green grapes
500g sugar (use less if you don’t like it too sweet, 250g-350g sugar will still work)
1/2 cup water
1 sprig of rose geranium – arbaroriza in Greece – kiouli in Cyprus
Juice of 1 lemon

Preparation

  1. Separate the grapes from the stalks and pick out any soft overripened grapes and discard.
  2. Wash the grapes very well and drain.
  3. Place the water in the bottom of a pot and then place the grapes and the sugar in alternating layers. After that, add the lemon juice and let it stand for a few hours so the grapes can release their juices.
  4. Place the pot on the stove and once it is warm use a spoon to stir carefully it so the sugar doesn’t stick to the bottom. After that, simmer for 40-45 minutes on very low heat with the lid on.
  5. Turn it off the heat and let it sit overnight covered with a tea towel. The next day brings it to the boil for 10 minutes to absorb excess fluid and bubble and then add the rose geranium a few minutes before.
  6. Finally, turn off the heat and cover it with a tea towel for a few hours before placing it into sterilised jars.
