Fasolakia Recipe Green Bean Casserole

Here is the recipe for Fasolakia Ladera, Green Bean Casserole. This is one of the dishes we commonly make in our cooking classes. It always surprises me how popular it is considering its simplicity. I think what makes it so appealing is the flavour it gives out with the use of only very few ingredients. We hero the green beans in this dish, use beautiful herbs and lots of top quality extra virgin olive oil to make this dish extra special. When I ask participants, which was their favourite dish this is always in the top 3. If you want to make it more decadent you can add some crumbled feta or goats’ cheese on top just before serving.
Ingredients
1kg green beans, trimmed
1/4 cup olive oil
1 onion and 1 garlic clove, chopped
400g can tomatoes, crushed
3 Bay leaves
1-2 cups of water
Salt and pepper to taste
2 tablespoons dill, chopped
Lemon juice to taste
Preparation
- Heat the olive oil in a large saucepan over medium heat. Add the chopped onions and sauté until translucent. Add in the garlic and cook-off, before adding in the tomatoes and bay leaf and enough water to cover the beans and bring to the boil.
- Add the green beans and mix, ensuring they are well coated with the mixture. Turn the heat down, cover with the lid and simmer for 25-30 minutes, until the beans are soft and most of the juices have evaporated. During cooking, check if the pan appears to be getting dry and add a little bit of hot water if needed.
- Towards the end of cooking time season with salt and pepper and stir in the chopped dill and lemon if desired.
